Plant First at Postillion Hotels
Postillion Hotels serves Plant First. This means our entire food offering, including lunch and dinner buffets, walking dinners and snacks, will now be plant-based by default. Flavourful, surprising and with minimal environmental impact.
Would you still like to enjoy animal proteins such as meat, fish or dairy? That option is still available as a supplement for a small fee of 25 euro cents per dish.
This contribution is fully donated to Trees for All and supports certified projects that offset CO₂, such as reforestation, forest protection and the creation of food forests. This fee is not extra margin for Postillion Hotels but an investment in a more sustainable future.
Our guiding principle is: reduce first, then offset. By putting plant-based first and compensating for any remaining emissions, we can truly make a difference.

What exactly is Plant First?
Plant First means that plant-based dishes are now our starting point. Vegetables, grains, legumes and other plant-based ingredients take centre stage. Meat and fish are still available, but no longer the default.
Why did you make this choice?
Because plant-based food has a smaller environmental footprint and is a positive step toward a more sustainable future. We want to make it easy for guests to choose consciously without compromising on taste or experience.

Does this apply to all hotels?
Yes, Plant First is being rolled out at all our locations.
Can I still order meat or fish?
Yes, absolutely. These options are still available, but now they are a conscious choice rather than the default.
Is plant-based food more expensive?
No. Plant-based is our standard and comes at no extra cost. If you choose a dish with meat, fish or dairy, a small fee of 25 euro cents applies per dish. This fee is fully donated to Trees for All to help offset the associated CO₂ emissions.
Why is there a fee for meat or fish?
We charge a small contribution for dishes containing animal proteins to support CO₂ compensation. The entire 25 euro cents goes to Trees for All, an organisation that invests in certified climate projects.
How does the CO₂ compensation work?
We intentionally compensate slightly more than average to increase impact. For each dish with meat, fish or dairy, we calculate the average CO₂ emissions. Based on that amount, and with a small additional margin for impact, we ask for a 25 euro cents contribution per dish.
This amount is entirely invested in CO₂ offsetting projects through Trees for All, such as tree planting and forest restoration.
What happens with the donations to Trees for All?
Trees for All has more than 25 years of experience in CO₂ offsetting through sustainable forest projects worldwide. Their approach of “reduce first, then offset” aligns with ours.
The 25 euro cents per dish is invested in certified climate projects, such as reforestation in Bolivia, forest recovery in Mexico and food forests in Ethiopia.
These projects follow the international Plan Vivo Standard, which ensures each tonne of CO₂ is actually captured. A unique CO₂ credit is issued for every tonne stored.
Postillion Hotels receives certificates showing how much CO₂ we have offset. These credits are then cancelled, meaning they cannot be resold or used again. This guarantees that the compensation is unique and measurable.
Trees for All is a Dutch ANBI (public benefit organisation) and holds the CBF quality mark, ensuring transparency and reliable donation management. Want to know more? Click here.
What about the breakfast buffet?
As of August 1st, our breakfast buffet will also be based on the Plant First principle. Not everything is plant-based yet, but taste and a good start to the day come first. Expect crispy croissants, fluffy pancakes, fresh fruit, creamy yoghurt, granola and superfoods. You will also find cheese, boiled and scrambled eggs, and delicious spreads. We continue to work on expanding our breakfast options with even more sustainable and tasty choices.
What does the restaurant menu look like for lunch and dinner?
Starting in July, our menu will also be Plant First. This means that the majority of the dishes are plant-based. For guests who prefer dishes with animal proteins, such as fish, meat, or dairy, plenty of options remain available. Wherever possible, we choose chicken, which has a relatively low CO₂ footprint, or hybrid meat. Hybrid meat contains a portion of plant-based proteins instead of being entirely meat, significantly reducing CO₂ emissions. The CO₂ compensation for these dishes is already included in the price. This way, we offer something for everyone without compromising on taste or sustainability.
Do you accommodate allergies or dietary needs?
Yes, of course. Plant-based does not automatically mean allergen-free, so we clearly list all ingredients and are happy to accommodate any specific requests.
What’s the difference between plant-based and vegan?
Plant-based means a dish is made entirely from plants and contains no animal ingredients like meat, dairy or eggs. At Postillion Hotels, our food offering is primarily plant-based, which means most dishes are naturally free from animal products.
Vegan goes further. It excludes all animal-derived products, not just in food, but in other areas too, such as clothing. Veganism is about avoiding animal products altogether in daily life.
Are you doing more in terms of sustainability?
Yes, definitely. In addition to our Plant First strategy, we are working toward broader sustainability goals. From 2026, all our hotels will be gas-free, significantly reducing our energy use. We also invest in solar panels and use data-driven tools like PMI Go Green and BrightGreen to monitor and improve our environmental impact. We actively fight food waste through smarter sourcing, planning and portioning, and we increasingly work with circular and local suppliers.
We also offset CO₂ emissions through our Hotels for Trees programme, which has already resulted in more than 30,000 trees being planted.
